It has been a long road since we started developing our own processing methods, 5 years ago we started this quest searching for a more sustainable processing in a way we can innovate our cup profiles.
The study has been conducted by the team at our farm and with a pull of 13 different varieties. As time went by, we started uncovering little by little the results, the fist time in the LA coffee Festival in 2018 and 2019. Well, now we've achieved the final stage of the processing development and the results are amazing. The releases will be divided into 4 different series, the first one, - Winter- bring us this amazing coffee:
Mostcatel grape, berries, brown sugar, nutmeg.
Don't expect a dark roast, this is a medium roast developed for filter extraction, delivering a complex and rich cup dominant by berries and caramel sweetness. Long lasting aftertaste from nutmeg evolving to subtle jasmine. Lots, lots of berries.
We enjoy this in filter, but you can make an epic espresso.
For espresso we recommend the following ratios:
1:2 For a full fruit experience.
